The story started a few years ago when my husband and I were on honeymoon in Provence. We loved the local nougat and wanted to produce something similar using ingredients sourced in Dorset.
After trying out various recipes, and a lot of trial and error, we still hadn’t managed to make the nougat, but we did make some flavoured marshmallows that were pronounced 'fantastic' by willing tasters from amongst our family and friends, and after a bit more product development, we were ready to present them to the public.
We are passionate about using only real flavour ingredients in our Marshmallows, and there are no artificial colours or preservatives either. (eg We use a high cacao chocolate and melt it into our chocolate and we use lemon juice and zest for our Lemon Marshmellows – BTW both of these have won Taste of the West Awards!)
We aim to keep our product local as possible – all the soft fruit we use is sourced locally from ‘pick-your-own farms.
Although we are very proud of our Marshmallows, we still wanted to make Dorset Honey Nougat, and towards the end of 2013 we finally made some that reached our ideal standard.
Since then we have developed our range of Nougats, all made with Dorset Honey, from Swanage, and local Free-Range eggs.
We have won Taste of the West Awards and Great Taste Awards for our Nougat
We make all our Nougat & Marshmellows by hand in a mostly rural Dorset area, in a kitchen not a factory; Gavin does the actual cooking (it's very hard to stir the inclusions into the nougat mixture , and I measure ingredients, do the washing up, and pack the products.
